BEEF STIR FRY WITH BROCCOLINI: The recipe can serve about six persons. It is so easy it can be prepared in thirty to sixty minutes.
INGREDIENTS:1 cup orange juicetwo teaspoons sesame oiltwo garlic, chopped3 tablespoons olive oiltwo pounds flank steak, cut into 1/2-inch strips1 tablespoon cornstarch1 red onion, thinly slicedtwo teaspoons curry powder2 tomatoes, chopped2 tablespoons soy sauce-low sodium1 tablespoon chopped parsley2 tablespoons chopped cilantroSalt
Freshly ground pepperFor the Broccolini:2 cups chopped broccolini (1 bunch)2 tablespoons olive oil1/2 red onion, sliced1 2-inch piece of ginger, peeled and minced2 garlic cloves, chopped1 tablespoon sesame seeds2 teaspoons curry powder2 teaspoons tomato paste2 Anaheim chilies, chopped with seeds and ribs removed2 tablespoons soy sauceJuice from 1 lime2 teaspoons sesame oil2 tablespoons rice wine vinegar2 scallions, choppedSalt
PROCEDURE:
Combine the garlic, sesame oil and the orange juice in a small mixing bowl. Then add the flank steak, turning to coat thoroughly all the steak pieces. Cover the bowl and refrigerate for at least twenty minutes but best if kept for two hours.
Then strain the marinade from the steak, reserving two tablespoons of the marinade and discard the rest.
Mix together the reserved marinade with one teaspoon cornstarch. Reserved for frying.Begin frying by heating the remaining three tablespoons of olive oil in a wok or a large saute pan over high heat on your American stove. Add the onion with curry powder and saute till translucent and fragrant for about three minutes.
Then cook the steak pieces and stir until color changes to brown for about five minutes. If you need to flip beef pieces it is just fine.
Add the marinade mixture, tomatoes and soy sauce. Heat to a boil and cook until the sauce thickens for about one minute.
Remove from heat and add the parsley and cilantro. Just season it with salt and pepper according to taste.
Serve with Broccolini.IN PREPRARING THE BROCCOLINI:Bring a large pot of salted water to a boil. Add the broccolini and simmer for one minute, then drain and rinse with cold water. Do not cover the pot.
Heat the olive oil in a large saute pan over medium heat on your American stove.Add the onions and stir till translucent and fragrant for about three minutes.Add the ginger and garlic, the tomato paste, sesame seeds, curry powder and saute for two minutes.Add the broccolini, chilies, soy sauce, lime juice, sesame oil, the vinegar and scallions and
